  • 1 cup diced carrots
  • 1 cup diced potatoes
  • 1 cup chopped onion
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Sauté the aromatics by heating the olive oil over medium heat, then adding the chopped onion until translucent.
  2. Add the veggies: toss in the diced carrots, potatoes, and broccoli, sautéing for about 5 minutes.
  3. Bring in the broth by pouring it in and bringing the pot to a gentle boil, then simmer for about 15 minutes.
  4. Stir in the heavy cream along with the garlic powder and onion powder, mixing until combined.
  5. Cook for an additional 5 minutes until the soup is luscious and creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with the remaining cheddar cheese on top.

Notes

Feel free to switch up the vegetables or thicken the soup by blending half of it for a creamier texture.
