Wholesome bars capturing the essence of classic carrot cake, made without sugar and perfect for dessert or breakfast.

  • 2 cups carrots (freshly grated)
  • 1 cup cottage cheese
  • 2 cups rolled oats (old-fashioned)
  • 2 large eggs
  • 1 tsp cinnamon (ground)
  • 0.5 tsp nutmeg (ground)
  • 1 tsp baking powder
  • 0.5 cup walnuts (roughly chopped)
  • 1 pinch sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Use a box grater or food processor to freshly grate 2 cups of carrots. Squeeze out excess moisture.
  3. In a large bowl, combine cottage cheese and eggs. Stir until smooth.
  4. Add rolled oats, cinnamon, nutmeg, baking powder, and a pinch of salt. Stir until combined without overmixing.
  5. Gently fold in grated carrots and walnuts until evenly distributed.
  6. Pour the batter into the prepared pan and smooth out. Press down slightly.
  7. Bake for 25–35 minutes until edges are golden and center is set.
  8. Let cool completely in the pan before slicing into 12 bars.

Notes

Store in an airtight container in the fridge for up to a week or freeze for up to 3 months.
