  • 2 tablespoons sake
  • 2 tablespoons tamari
  • 2 tablespoons miso paste
  • 1 tablespoon roasted sesame oil
  • 1 teaspoon fresh ginger
  • 1 tablespoon honey
  • 4 fillets salmon
  • To taste sesame seeds
  • 2 tablespoons scallion/green onion

Instructions

  1. Create the Umami Marinade: In a bowl, whisk together the mirin, sake, tamari, miso paste, roasted sesame oil, fresh ginger, and honey until smooth.
  2. Marinate the Salmon: Place the salmon fillets in a shallow dish or a resealable bag. Pour the marinade over the salmon, ensuring each piece is generously coated. Cover and marinate in the refrigerator for at least 15 minutes.
  3. Preheat the Grill or Oven: While the salmon marinates, preheat your grill to medium heat or your oven to 400°F (200°C).
  4. Cook the Salmon: Remove the salmon from the marinade and allow excess to drip off. Grill or bake for 10-15 minutes, until the salmon flakes easily with a fork.
  5. Garnish and Serve: Remove the salmon from the grill or oven, let it rest for a minute, then serve topped with sesame seeds and scallions.
