A quick and easy One Pot Spaghetti recipe that captures the essence of Italian flavors.

  • 8 ounces spaghetti
  • 1 can (15 ounces) diced tomatoes
  • 2 cups vegetable broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the diced tomatoes, vegetable broth, oregano, basil, salt, and pepper. Bring to a boil.
  5. Add the spaghetti, ensuring it’s submerged in the liquid.
  6. Reduce heat to low, cover, and simmer for about 10-12 minutes or until the pasta is cooked, stirring occasionally.
  7. Remove from heat and let sit for a few minutes before serving.
  8. Garnish with fresh basil or parsley if desired.

Notes

For best flavor, don’t skip seasoning and consider adding grated Parmesan cheese before serving.
