One-Pot Taco Spaghetti

A quick and delicious fusion of taco and pasta flavors, perfect for busy weeknights.

Ingredients

  • 8 ounces spaghetti
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes (15 ounces)
  • 2 cups beef broth
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Optional toppings: sour cream, cilantro, diced onions

Instructions

  1. Brown the ground beef in a large pot over medium heat until fully cooked, then drain excess fat.
  2. Stir in the taco seasoning and cook for another minute.
  3. Add the diced tomatoes and beef broth, then bring to a boil.
  4. Add the spaghetti, stirring to combine, and cover the pot.
  5. Reduce heat to a simmer and cook for about 10-12 minutes, or until spaghetti is al dente and most of the liquid is absorbed.
  6. Remove from heat and stir in the shredded cheese until melted.
  7. Serve with optional toppings as desired.

Notes

To keep the spaghetti from clumping, stir occasionally while cooking. Substitute ground turkey or chicken for a leaner option.
