Delightful mini muffins blending soft, fluffy pancake goodness with savory sausage, perfect for breakfast or snacks.

Ingredients

  • 1 cup pancake mix
  • 1 cup milk
  • 1 large egg
  • 1 cup cooked sausage, crumbled
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup maple syrup (optional)
  • Cooking spray or muffin liners

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large bowl, combine the pancake mix, milk, and egg, stirring until just combined.
  3. Fold in the crumbled sausage and cheese (if using).
  4. Fill each muffin tin cup about 2/3 full with the batter.
  5. If desired, drizzle maple syrup on top of each muffin.
  6. Bake for 12-15 minutes or until a toothpick comes out clean.
  7. Let the muffins cool slightly before removing from the pan.
  8. Enjoy warm or store for meal prep.
