Ingredients

  • 1 cup peanut butter
  • 1 cup sugar
  • 1 egg
  • 1 tsp baking soda
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine peanut butter, sugar, egg, baking soda, vanilla extract, and a pinch of salt.
  3. Mix until smooth and well incorporated.
  4. Roll the dough into balls about the size of a golf ball and place them on a lined baking sheet.
  5. Using a fork, flatten each ball to create a crisscross pattern.
  6. Bake for 10-12 minutes or until golden.
  7. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For extra flavor, sprinkle sea salt on top before baking or dip half of each cookie in melted chocolate.
