A delightful dish combining succulent shrimp, vibrant asparagus, and al dente pasta, all enveloped in fragrant pesto sauce.

Ingredients

  • 8 ounces pasta (such as linguine or fettuccine)
  • 1 pound shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1/2 cup pesto sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)
  • Red pepper flakes (optional, for added spice)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Once al dente, drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat until shimmering and ready for action.
  3. Add the shrimp to the skillet and cook until they turn a lovely pink and opaque, about 2-3 minutes per side.
  4. Remove the shrimp from the skillet and set them aside on a plate.
  5. Toss in the asparagus and sauté for about 4-5 minutes until tender-crisp.
  6. Return the shrimp to the skillet, and gently stir in the cooked pasta and the pesto sauce until everything is beautifully combined.
  7. Add salt and pepper to taste, giving it that final touch of flavor.
  8. Serve hot, garnished with a sprinkle of Parmesan cheese and red pepper flakes if you’re feeling spicy.

Notes

Be sure to not overcook the shrimp and feel free to customize with other veggies.
