Fluffy and wholesome banana oatmeal pancakes that are simple to make and deliciously satisfying.

Ingredients

  • 1 cup rolled oats
  • 1 cup milk (or non-dairy alternative)
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings (e.g., fruits, honey, maple syrup)

Instructions

  1. In a blender, combine the ripe banana, rolled oats, milk, baking powder, vanilla extract, and a pinch of salt. Blend until smooth.
  2. Let the batter rest while you prepare your skillet.
  3. Preheat a non-stick skillet over medium heat.
  4. Scoop 1/4 cup of the batter onto the skillet for each pancake.
  5. Cook for about 2-3 minutes until bubbles form on the surface. Flip and cook for another 1-2 minutes until golden brown.
  6. Serve warm with your choice of toppings.

Notes

For extra fluffiness, consider whipping egg whites separately and folding them into the batter before cooking.
