A delightful dish featuring sweet roasted carrots paired with creamy whipped ricotta and drizzled with zesty hot honey, perfect as a starter or side dish.

  • 1 lb Carrots
  • 1 cup Ricotta cheese
  • 3 tbsp Honey
  • 2 tbsp Olive oil
  • Salt to taste
  • Pepper to taste
  • Red pepper flakes (optional)
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and trim the carrots, ensuring they are cut into uniform sizes.
  3. Toss the carrots with olive oil, salt, and pepper on a baking sheet.
  4. Roast the carrots in the oven for 25-30 minutes, stirring halfway through.
  5. Whip the ricotta cheese in a mixing bowl until smooth and airy.
  6. Plate the whipped ricotta on a serving dish and arrange the roasted carrots over the top.
  7. Drizzle hot honey over the plated carrots.
  8. Garnish with fresh herbs before serving.
