Delicious ice cream sandwiches featuring chewy rum balls and creamy vanilla ice cream, perfect for summer nights.

Ingredients

  • 1 cup raisins
  • 1/2 cup dark rum
  • 2 cups vanilla ice cream
  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup powdered sugar
  • 1/4 cup corn syrup
  • 2 tablespoons butter, melted

Instructions

  1. Soak the raisins in dark rum for at least 2 hours or overnight.
  2. In a bowl, combine the chocolate cookie crumbs, cocoa powder, powdered sugar, corn syrup, and melted butter. Mix until well combined.
  3. Form the mixture into small ball shapes and refrigerate for 30 minutes to firm up.
  4. Scoop a generous amount of vanilla ice cream and sandwich it between two rum balls.
  5. Serve immediately or freeze until ready to serve.

Notes

For a non-alcoholic version, soak the raisins in apple juice or a vanilla extract and water mix. You can substitute dark rum with any flavorful rum.
