A comforting bowl of Sausage Potato Soup that warms the soul and fills the house with inviting aromas.

Ingredients

  • 1 pound sausage
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Brown the sausage in a large pot over medium heat for 5-7 minutes. Remove and set aside.
  2. Sauté the onion and garlic in the same pot until softened, about 3-5 minutes.
  3. Combine the potatoes, chicken broth, thyme, salt, and pepper. Bring to a boil, then simmer until potatoes are tender, about 15-20 minutes.
  4. Add the heavy cream and browned sausage. Simmer for another 5 minutes.
  5. Garnish with parsley and serve hot.
