A quick and healthy dinner option featuring perfectly baked salmon stuffed with creamy feta cheese and vibrant spinach.

Ingredients

  • 4 salmon fillets
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped spinach to the skillet and stir occasionally, cooking until wilted, about 2-3 minutes.
  4. Remove from heat and mix in the crumbled feta cheese with the wilted spinach.
  5. Season the salmon fillets with salt and pepper on both sides.
  6. Cut a pocket in each salmon fillet for stuffing.
  7. Fill each pocket with the spinach and feta mixture, then place them on a baking sheet lined with parchment paper.
  8. Bake for 15-20 minutes until the salmon is cooked through and flakes easily with a fork.
  9. Serve warm with fresh lemon wedges.
