Slow Cooker Amish Chicken and Noodles

A comforting dish of tender chicken, hearty vegetables, and egg noodles, perfect for busy weeknights.

Ingredients

  • 1 whole chicken or 4 chicken thighs
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 8 ounces egg noodles
  • 2 cups frozen peas

Instructions

  1. Place the chicken in the slow cooker.
  2. Add chicken broth, onion, carrots, celery, garlic powder, thyme, salt, and pepper.
  3. Cover and cook on low for 6-8 hours.
  4. Remove, shred the chicken, and return to the slow cooker.
  5. Add egg noodles and cook on high for an additional 30 minutes.
  6. Stir in frozen peas just before serving.

Notes

For less prep time, use pre-cooked rotisserie chicken. Leftovers can be stored in the fridge for up to 3 days.
