A comforting slow cooker dish of beef chuck roast infused with garlic and butter, accompanied by tender baby potatoes.

  • 2 lbs beef chuck roast
  • 1 cup unsalted butter
  • 6 cloves garlic, minced
  • 1 lb baby potatoes
  • 2 cups beef broth
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Place the beef chuck roast in the slow cooker.
  2. Melt the butter in a saucepan and sauté the garlic until fragrant.
  3. Pour the garlic butter over the beef.
  4. Add baby potatoes around the beef.
  5. Pour in beef broth and season with salt and pepper.
  6. Cover and cook on low for 8 hours or high for 4 hours.
  7. Serve hot, garnished with fresh parsley.

Notes
