  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and halved
  • 1 red onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • Fresh basil for garnish

Instructions

  1. In a slow cooker, add the chicken breasts.
  2. In a bowl, mix together the cherry tomatoes, olives, red onion, garlic, oregano, thyme, salt, pepper, chicken broth, and olive oil.
  3. Pour the mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 6-7 hours or until the chicken is cooked through and tender.
  5. Before serving, garnish with fresh basil.

Notes
