Delightfully fun and savory meatloaf cupcakes encased in crispy bacon and topped with creamy mashed potatoes, perfect for gatherings.

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1/4 cup barbecue sauce
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 egg
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 8 slices bacon
  • 2 cups mashed potatoes
  • 1 tbsp butter
  • 1/4 cup milk
  • 1 tsp garlic powder
  • 1/4 cup chopped green onions (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the ground beef, ground pork, breadcrumbs, parmesan cheese, barbecue sauce, chopped onion, minced garlic, egg, smoked paprika, salt, and pepper until well combined.
  3. Line a muffin tin with the bacon slices, allowing them to hang over the edges.
  4. Spoon the meat mixture into each bacon-lined cup, packing it down gently.
  5. Bake for 25-30 minutes, or until cooked through and the bacon is crispy.
  6. While baking, prepare the mashed potatoes with butter, milk, garlic powder, salt, and pepper until creamy.
  7. Let the cupcakes cool slightly before lifting them out.
  8. Pipe or spoon the creamy mashed potatoes on top of each meatloaf cupcake.
  9. Garnish with chopped green onions and serve warm.

Notes

These cupcakes can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave.
