A comforting and nutritious lasagna made with layers of smoky lentils, vibrant veggies, and creamy cheeses, perfect for family gatherings or cozy dinners.

Ingredients

  • 9 lasagna noodles
  • 1 cup lentils (green or brown)
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 2 cups spinach
  • 1 can (14.5 oz) crushed tomatoes
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lentils in vegetable broth according to package instructions.
  3. Sauté diced onion and minced garlic until translucent and fragrant.
  4. Add diced bell pepper and zucchini to the skillet, cook until tender, then stir in spinach, crushed tomatoes, smoked paprika, oregano, basil, salt, and pepper; let simmer.
  5. In a baking dish, layer the vegetable mixture, lasagna noodles, ricotta cheese, and lentils. Repeat layers, finishing with noodles and mozzarella on top.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until bubbly.
  7. Let cool for a few minutes before serving.

Notes

Customize cheese types, and don’t hesitate to add extra veggies. Let lasagna rest before slicing for cleaner layers.
