A delightful S’mores Cake that encapsulates the joy of traditional campfire treats in a rich chocolate cake with marshmallow filling and graham cracker crunch.

Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 3/4 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 3/4 cup unsweetened cocoa powder
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups marshmallow fluff
  • 1 cup crushed graham crackers
  • 1 cup melted milk chocolate

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Combine flour, sugar, baking powder, baking soda, salt, and cocoa powder in a bowl.
  3. Add eggs, milk, vegetable oil, and vanilla extract; mix on medium speed for 2 minutes.
  4. Stir in the boiling water until fully incorporated.
  5. Pour the batter into the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Cool the cakes in the pans for 10 minutes before transferring them to wire racks.
  8. Spread marshmallow fluff between the layers of cooled cake.
  9. Add crumbled graham crackers on top of the marshmallow fluff.
  10. Drizzle melted chocolate over the top of the cake.
  11. Garnish with more crushed graham crackers if desired.

Notes

For extra flavor, toast some marshmallow fluff on top with a kitchen torch. Store leftovers in an airtight container in the refrigerator for up to 5 days.
