S’mores French Macarons

Elegant French macarons that encapsulate the nostalgic essence of s’mores with chocolate ganache and marshmallow fluff.

Ingredients

  • 1 cup almond flour
  • 1 3/4 cup powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon chocolate extract
  • 1/2 cup chocolate ganache
  • 1/2 cup marshmallow fluff
  • 1/2 cup crushed graham crackers

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a bowl, sift together the almond flour and powdered sugar.
  3. In a separate bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and beat until stiff peaks form.
  4. Fold in the vanilla and chocolate extracts.
  5. Carefully fold in the sifted dry ingredients.
  6. Transfer the batter to a piping bag and pipe small circles onto the baking sheet. Let them rest for 30 minutes.
  7. Bake for 15-20 minutes or until the shells are firm.
  8. Let cool completely on the baking sheet before transferring to a wire rack.
  9. Spread chocolate ganache and marshmallow fluff between two macaron shells. Sprinkle with crushed graham crackers.

Notes
