A comforting and hearty ham and bean soup, perfect for chilly evenings and family gatherings.

Ingredients

  • 1 pound dried navy beans
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1 pound ham, diced
  • 6 cups chicken broth
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 bay leaves

Instructions

  1. Soak the navy beans in water overnight.
  2. In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery; sauté until soft.
  3. Stir in the garlic and ham, cooking for another 2 minutes.
  4. Add the soaked beans, chicken broth, thyme, bay leaves, salt, and pepper.
  5. Bring to a boil, then reduce the heat and simmer for about 90-120 minutes or until the beans are tender.
  6. Remove the bay leaves before serving. Enjoy your soup hot.

Notes

Store leftovers in an airtight container for up to 5 days or freeze for up to three months. Consider using low-sodium chicken broth to reduce sodium intake.
