  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the chopped spinach, softened cream cheese, shredded mozzarella, minced garlic, salt, and pepper until well combined.
  3. Carefully cut a pocket into the side of each chicken breast and stuff with the spinach mixture.
  4. Heat olive oil in a skillet over medium heat and sear each stuffed chicken breast for about 4-5 minutes on each side until golden brown.
  5. Transfer the seared chicken to a baking dish and bake for 20-25 minutes until the chicken is cooked through.
  6. Allow the chicken to rest before slicing and serving.

Notes

For added flavor, consider sprinkling extra mozzarella on top before baking. This dish pairs well with a light salad or roasted vegetables.
