Ingredients

Scale
  • 1 box strawberry cake mix
  • Eggs, oil, and water (as directed on cake mix package)
  • 1.5 cups strawberries (fresh or frozen, chopped)
  • 1 cup white chocolate chips
  • 1 cup sweetened shredded coconut
  • 0.5 cup pecans or walnuts (chopped, optional)
  • 8 oz cream cheese (softened)
  • 0.5 cup unsalted butter (softened)
  • 2.5 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F and grease a 9×13-inch baking dish.
  2. Follow the package instructions for the strawberry cake mix with the specified eggs, oil, and water, then pour the batter into the prepared baking dish.
  3. Sprinkle the chopped strawberries, white chocolate chips, shredded coconut, and chopped nuts over the cake batter.
  4. In a mixing bowl, combine the softened cream cheese, unsalted butter, powdered sugar, and vanilla extract. Beat until smooth to create a creamy topping.
  5. Drop spoonfuls of the cream cheese mixture over the cake batter and gently swirl it with a knife.
  6. Bake for 45 to 50 minutes until golden brown and slightly gooey in the center.
  7. Let it cool slightly before serving warm or chilled.

Notes

For best flavor, use fresh strawberries when in season. Chilling the cream cheese mixture can help blending.
