A comforting and hearty soup with smoky sausage, robust greens, creamy beans, and a vibrant tomato broth.

Ingredients

  • 1 cup smoky sausage, sliced
  • 4 cups hearty greens (such as collard greens or kale)
  • 2 cups creamy beans (like white beans or cannellini beans)
  • 4 cups tomato broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt, pepper, and spices (cumin, paprika, or your favorites)

Instructions

  1. Heat the olive oil over medium heat in a large pot.
  2. Add the chopped onion and minced garlic, sauté until soft and fragrant.
  3. Stir in the smoky sausage and cook until browned.
  4. Add the hearty greens and sauté until wilted.
  5. Pour in the tomato broth and bring to a simmer.
  6. Add the creamy beans and season with salt, pepper, and spices.
  7. Let the soup cook for about 20 minutes.
