A delightful combination of roasted sausages, sweet potatoes, and broccoli, all coated in a honey garlic glaze.

  • 1 pound Chicken or Turkey Sausage (or substitute with pork, beef, or plant-based sausages)
  • 2 cups Sweet Potatoes (Diced into 1/2-inch cubes)
  • 2 cups Broccoli Florets (or substitue with bell peppers, onions, or Brussels sprouts)
  • 2 tablespoons Unsalted Butter (or omit for a dairy-free version)
  • 3 cloves Garlic (Minced)
  • 1/4 cup Honey (or maple syrup/agave for vegan options)
  • 2 tablespoons Low-Sodium Soy Sauce (or tamari for gluten-free)
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Salt (To taste)
  • 1 teaspoon Black Pepper (To taste)
  • 2 tablespoons Fresh Parsley (Optional)

Instructions

  1. Preheat your oven to 400°F (200°C). While it warms up, grab a large mixing bowl to combine your veggies and sausages.
  2. Dice your sweet potatoes into 1/2-inch cubes and place them in the mixing bowl. Add in those vibrant broccoli florets.
  3. Slice the chicken or turkey sausages into bite-sized pieces and toss them into the bowl with the sweet potatoes and broccoli.
  4. In a separate bowl, whisk together the minced garlic, honey, soy sauce, apple cider vinegar, salt, and black pepper until well combined.
  5. Pour the honey garlic mixture over the sausage and veggies. If using butter, melt it and drizzle it over the top as well. Toss everything together until nicely coated.
  6. Spread the mixture out in a single layer on a large baking sheet lined with parchment paper.
  7. Place the baking sheet in the preheated oven and roast for about 25 minutes, or until the sweet potatoes are tender and golden brown.
  8. Once it’s out of the oven, give everything a gentle toss, sprinkle with fresh parsley if desired, and serve hot.
