A customizable and comforting Taco Rice Bowl filled with savory meat, black beans, corn, and fresh toppings.

Ingredients

  • 1 cup cooked rice
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 avocado, sliced
  • 1 cup lettuce, shredded
  • Sour cream (optional)
  • Salsa (optional)

Instructions

  1. In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain the excess fat.
  2. Add the taco seasoning to the skillet, along with water; simmer until well combined.
  3. In a bowl, layer the cooked rice as the base.
  4. Top the rice with the seasoned meat mixture, followed by black beans, corn, diced tomatoes, and shredded cheese.
  5. Finish your bowl with avocado slices and shredded lettuce.
  6. Serve with sour cream and salsa on the side.

Notes

For a vegetarian version, substitute meat with more beans or sautéed vegetables.
