A delightful Southern feast featuring tender BBQ ribs, juicy chicken, and savory sausage, paired with creamy mac and cheese and sautéed green beans.

Ingredients

  • 1 rack of pork spare ribs (or St. Louis style)
  • 2 chicken leg quarters (drumstick & thigh attached)
  • 1 link of smoked sausage or kielbasa
  • 2 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup BBQ sauce (sweet & tangy)
  • 1 lb fresh green beans (trimmed, or 2 cans)
  • 2 slices bacon (chopped)
  • 0.25 cup onion (diced)
  • 1 cup chicken broth
  • 2 cups elbow macaroni
  • 2 cups sharp cheddar cheese (shredded)
  • 1 cup milk
  • 2 tbsp butter
  • 1 tbsp flour
  • White sandwich bread (slices for serving)

Instructions

  1. Dry & Season the Meats: Pat the ribs and chicken dry with paper towels. Mix the brown sugar, smoked paprika, garlic powder, onion powder, salt, and black pepper, and coat the meats with the rub.
  2. Prepare for Baking: Wrap the seasoned ribs in aluminum foil and place them on a baking sheet alongside the chicken legs.
  3. Bake the Meats: Preheat the oven to 300°F (150°C). Bake the ribs for 2.5 to 3 hours and the chicken for 45 to 60 minutes until the internal temperature reaches 165°F.
  4. Glaze & Broil: Unwrap the ribs and brush them and the chicken with BBQ sauce. Broil on high for 3-5 minutes until the sauce caramelizes.
  5. Sauté the Sausage: Grill or pan-fry the sausage until browned, then slice it.
  6. Cook the Green Beans: Sauté bacon and onion, then add green beans and broth, cooking until tender.
  7. Mac & Cheese Time: Boil macaroni until al dente, then make a cheese sauce. Combine with pasta and bake with extra cheese.
  8. Plate the Trio: Arrange meats, green beans, and mac and cheese artistically on a plate with bread.

Notes

For added freshness, pair with coleslaw or a simple tomato salad. Sweet tea or lemonade complements the meal perfectly.
