A comforting and easy one-pot meal that captures the delicious flavors of classic stuffed peppers without the fuss.

  • 1 cup rice
  • 2 bell peppers, chopped
  • 1 can (14 oz) diced tomatoes
  • 1 cup tomato sauce
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Water or broth as needed

Instructions

  1. Sauté the Beef and Onions: In a large pot over medium heat, add the ground beef and chopped onion. Cook until the beef is browned and the onion has softened, stirring frequently, about 5-7 minutes.
  2. Add the Garlic: Once the beef and onions are beautifully cooked, add the minced garlic. Sauté for an additional minute until aromatic.
  3. Combine Ingredients: Stir in the rice, diced tomatoes, chopped bell peppers, tomato sauce, Italian seasoning, salt, and pepper.
  4. Add Liquids: Pour in enough water or broth to just cover the mixture.
  5. Bring to a Boil: Raise the heat and bring the pot to a boil, letting the flavors dance together.
  6. Simmer: Once boiling, reduce the heat to low and cover the pot. Allow it to simmer gently for about 20-25 minutes until the rice is fully cooked and the peppers are tender.
  7. Serve Warm: Give it a gentle stir, taste for seasoning, and serve it warm.

Notes

This dish can be stored in an airtight container in the refrigerator for up to 4 days. It heats up well in the microwave or on the stovetop.
