  • 1 pie crust (your favorite homemade or store-bought, single crust)
  • 34 large eggs (at room temperature)
  • 1 cup light brown sugar (packed)
  • 0.5 tsp kosher salt
  • 6 tbsp unsalted butter (melted and cooled slightly)
  • 2 tbsp apple cider vinegar

Instructions

  1. Preheat your oven to 350°F.
  2. Line a standard 9-inch pie pan with your chosen pastry and crimp the edges.
  3. Line the crust with parchment paper and fill with pie weights. Bake for 15 minutes.
  4. Remove the lining and weights; brush the crust with an egg wash.
  5. Prick the bottom of the crust with a sharp knife.
  6. Bake for an additional 10-15 minutes until dry and slightly golden.
  7. In a mixing bowl, whisk together the eggs, brown sugar, and salt until smooth.
  8. Drizzle in the melted butter while whisking.
  9. Whisk in apple cider vinegar.
  10. Pour the filling into the par-baked crust.
  11. Bake for about 35 minutes until the internal temperature reaches 165°F.
  12. Let cool to room temperature.
  13. Serve at room temperature or slightly chilled, garnished with whipped cream if desired.

Notes
