A creamy and comforting winter dish combining the flavors of chili with cottage cheese and topped with melted mozzarella.

  • 2 cups shredded rotisserie chicken
  • 1 cup cottage cheese
  • 1 can white beans (drained and rinsed)
  • 0.5 cup chicken broth
  • 0.25 cup diced green chiles
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • Salt and pepper (to taste)
  • 0.5 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F.
  2. In a large bowl, combine the shredded chicken, cottage cheese, white beans, broth, green chiles, cumin, garlic powder, salt, and pepper.
  3. Mix until everything is well combined and the cottage cheese is evenly distributed.
  4. Spread the mixture into a lightly greased baking dish, making sure the top is level.
  5. Sprinkle mozzarella over the surface for a golden finish.
  6. Bake for 20–25 minutes or until the cheese is melted and lightly browned.
  7. Let the casserole rest for about 5 minutes, then serve warm.
