  • 1/2 cup unsalted butter (melted; can use neutral oil for dairy-free)
  • 1 cup granulated sugar (can reduce by a third for less sweetness)
  • 2 large eggs (essential for rise)
  • 1 teaspoon vanilla extract (enhances flavor)
  • 1.5 cups all-purpose flour (gluten-free flour can be used)
  • 1 teaspoon baking soda (for leavening)
  • 1/2 teaspoon salt (balances sweetness)
  • 1 teaspoon ground cinnamon (infuses warmth)
  • 1/4 teaspoon ground nutmeg (adds aromatic touch)
  • 1 cup chopped walnuts or pecans (optional for texture and flavor)
  • 1 cup chocolate chips (for a sweet twist)
  • 1/2 cup dried fruit (like cranberries or coconut flakes)
  • 1 cup extra nuts (variety enhances flavor)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your loaf pan by greasing it lightly with butter or lining it with parchment paper for easy removal later.
  2. Mash the ripe bananas until smooth.
  3. Stir in the melted butter until well blended, then add the granulated sugar, eggs, and vanilla extract. Mix until fully combined.
  4. In a separate bowl, sift together the all-purpose flour, baking soda, salt, ground cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the banana mixture, folding them in gently. Be careful not to over-mix.
  6. Now’s the time to fold in those extra goodies: chocolate chips, walnuts or pecans, and dried fruits!
  7. Transfer your batter into the prepared loaf pan, spreading it evenly.
  8. Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
  10. Slice your banana bread and serve it warm or at room temperature.

Keep any leftover banana bread wrapped in plastic wrap or in an airtight container at room temperature for up to 3 days. For longer storage, you can freeze slices in a freezer bag for up to 3 months.
