A vibrant and refreshing salad featuring crunchy edamame, mixed greens, and a zesty lime dressing.

Ingredients

  • 2 cups shelled edamame
  • 2 cups mixed salad greens
  • 1 cup chopped red bell pepper
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1/4 cup sesame seeds
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the edamame, mixed greens, red bell pepper, shredded carrots, green onions, sesame seeds, and cilantro. Toss them gently together.
  2. In a small bowl, whisk together the olive oil, rice vinegar, soy sauce, lime juice, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.

Notes
