Ingredients

- 2 cups split peas
- 1 onion, chopped
- 2 carrots, diced
- 2 stalks celery, diced
- 4 cups vegetable or chicken broth
- 2 bay leaves
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, diced carrots, and celery. Sauté until softened.
- Stir in the split peas, broth, bay leaves, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and cover. Simmer for 30-40 minutes until peas are soft.
- Remove bay leaves. Blend the soup for a smoother texture if desired.
