  • 1 1/2 cups Kodiak Cakes pancake mix
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 cup diced apples
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Combine the Kodiak pancake mix, sugar, baking powder, ground cinnamon, and salt in a large mixing bowl.
  3. Whisk together the applesauce, milk, vegetable oil, eggs, and vanilla extract in another bowl.
  4. Mix the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced apples.
  5. Pour the batter into the prepared loaf pan, smoothing it out evenly.
  6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For added richness, spread warm slices with butter. Store in an airtight container for up to 3 days or freeze for up to 3 months.
