  • 1.5 pounds pork tenderloin
  • 1 cup applesauce
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 small onion, diced
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the pork tenderloin dry and season with salt and pepper.
  3. Heat the olive oil in an ovenproof skillet over medium-high heat and sear the pork on all sides until golden brown.
  4. Reduce the heat to medium and add the diced onion and minced garlic, sautéing until the onions are translucent.
  5. Stir in the applesauce, Dijon mustard, and fresh thyme.
  6. Return the seared pork to the skillet, spooning sauce over the top.
  7. Transfer the skillet to the oven and roast until the pork reaches an internal temperature of 145°F (63°C).
  8. Remove the pork from the oven and let it rest for 5 to 10 minutes before slicing.
  9. Slice the pork tenderloin and serve warm with the sauce.
