Ingredients
Scale
2 lbs beef chuck roast
2 cups water
1 onion, chopped
4 cloves garlic, minced
2 dried ancho chiles, stemmed and seeded
2 dried guajillo chiles, stemmed and seeded
1 tsp cumin
1 tsp oregano
Salt and pepper to taste
Corn tortillas
Chopped cilantro and onions for serving
Lime wedges for serving
Instructions
Assemble Your Ingredients: In a pot, place the beef chuck roast, water, onion, garlic, and spices—don’t forget to add the softened chilies after blending them with a bit of water.
Bring to a Boil: Bring the mixture to a boil over medium heat. Once it’s bubbling, reduce the heat to low.
Simmer to Perfection: Allow it to simmer for 120-180 minutes, stirring occasionally, until the beef is tender and falls apart easily.
Shred the Beef: Once the beef is cooked, shred it generously using two forks, and return it to the flavorful broth.
Prepare the Tacos: Heat the corn tortillas on a hot griddle and fill each one with the delicious beef mixture.
Garnish and Serve: Serve your tacos with chopped cilantro, diced onions, and lime wedges on the side.
