  • 2 dried guajillo chiles, stemmed and seeded
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped cilantro and onions for serving
  • Lime wedges for serving

Instructions

  1. Assemble Your Ingredients: In a pot, place the beef chuck roast, water, onion, garlic, and spices—don’t forget to add the softened chilies after blending them with a bit of water.
  2. Bring to a Boil: Bring the mixture to a boil over medium heat. Once it’s bubbling, reduce the heat to low.
  3. Simmer to Perfection: Allow it to simmer for 120-180 minutes, stirring occasionally, until the beef is tender and falls apart easily.
  4. Shred the Beef: Once the beef is cooked, shred it generously using two forks, and return it to the flavorful broth.
  5. Prepare the Tacos: Heat the corn tortillas on a hot griddle and fill each one with the delicious beef mixture.
