Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 pound andouille sausage, sliced
  • 1 pound chicken thighs, cut into pieces
  • 6 cups chicken broth
  • 2 cups okra, sliced (fresh or frozen)
  • 23 bay leaves
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • 2 green onions, sliced
  • Fresh parsley, chopped
  • Cooked white rice, for serving

Instructions

  1. Craft the Roux: In a large pot, heat the vegetable oil over medium heat. Whisk in the flour to create a roux. Cook, stirring constantly, until the roux turns a dark brown color (about 20-30 minutes).
  2. Sauté the Vegetables: Add the onion, bell pepper, celery, and garlic to the roux. Stir and cook until the vegetables are softened, about 5-7 minutes.
  3. Brown the Meats: Add the sausage and chicken to the pot, cooking until browned, about 5-10 minutes.
  4. Combine Ingredients: Pour in the chicken broth and add the okra, bay leaves, and Cajun seasoning. Bring to a boil, then reduce heat and simmer for at least 1 hour.
  5. Season to Perfection: Season with salt and pepper to taste.
  6. Serve with Love: Serve hot over cooked white rice, garnished with green onions and fresh parsley.

Gumbo can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for up to 3 months.
