A delightful blend of aromatic basmati rice and tender chicken cooked with spices, perfect for gathering and family meals.

  • 2 cups basmati rice
  • 500 grams chicken, cut into pieces
  • 1 large onion, sliced
  • 2 tomatoes, chopped
  • 4 tablespoons yogurt
  • 23 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 45 green cardamom pods
  • 45 cloves
  • 12 cinnamon sticks
  • 1 bay leaf
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Fresh cilantro and mint leaves, chopped
  • Salt to taste
  • 4 cups water
  • 3 tablespoons oil or ghee

Instructions

  1. Rinse and soak the rice under cold water until the water runs clear, then soak for at least 30 minutes. Drain before cooking.
  2. Sauté the onions in oil or ghee over medium heat until they turn golden brown.
  3. Introduce ginger-garlic paste and slit green chilies, cooking for another minute.
  4. Add chicken pieces and cook until browned on all sides.
  5. Stir in chopped tomatoes, yogurt, coriander powder, garam masala, and salt. Cook until the chicken is cooked through and the oil separates.
  6. In a separate pot, bring 4 cups of water to a boil. Add soaked rice and cook until about 70% done, then drain.
  7. Layer the partially cooked rice over the chicken mixture, sprinkling with cardamom, cloves, cinnamon, and bay leaf. Top with cilantro and mint leaves.
  8. Cover the pot and cook on low flame for 20-25 minutes.
  9. Serve hot with raita or a fresh salad.

Notes

For extra flavor, marinate the chicken overnight in yogurt and spices. Serve with cucumber raita for a refreshing contrast.
