  • 1 cup shrimp, peeled and deveined
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large pan or wok over medium heat.
  2. Cook the shrimp until they turn pink, about 3-4 minutes.
  3. Push the shrimp to one side of the pan and scramble the eggs.
  4. Stir-Fry the mixed vegetables until vibrant and tender.
  5. Add the rice, soy sauce, salt, and pepper, stirring to combine.
  6. Mix in the chopped green onions and serve hot.

Notes

Use day-old rice for the best texture. Cook in batches if needed.
