1 pineapple, peeled, cored and cut into bite-sized chunks
1 pound bacon, each slice cut in half
1 cup brown sugar
1/4 cup hot sauce
1/4 cup packed light brown sugar
1 tablespoon soy sauce
1 teaspoon grated ginger
3/4 teaspoon cayenne pepper
1 tablespoon pineapple juice
Instructions
Preheat the oven to 400°F and place a rack inside a large rimmed baking sheet to catch all the delicious drippings.
Cut each slice of bacon in half and wrap it around a chunk of pineapple. Secure the bacon with a toothpick, creating little bundles of flavor, then place the wrapped bites on the prepared baking rack.
In a small bowl, combine the brown sugar, soy sauce, grated ginger, cayenne pepper, and pineapple juice until thoroughly mixed.
Roll each bacon-wrapped pineapple piece in the light brown sugar, covering it completely. Then, spoon the glaze mixture over each bundle, ensuring they’re evenly coated.
Place the baking sheet in the preheated oven and bake for 25 to 30 minutes, or until the bacon is crispy and the sugar is caramelized and bubbly.
Remove from the oven and let them cool for 5 minutes before serving warm.
