Juicy chicken breasts stuffed with a creamy cheese filling, baked to crispy perfection.

Ingredients

  • 1 pound chicken breast
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 eggs
  • Olive oil for frying

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Flatten the chicken breasts using a meat mallet or rolling pin, then season with garlic powder, Italian seasoning, salt, and pepper.
  3. Mix mozzarella and Parmesan cheeses in a bowl.
  4. Place a small amount of cheese mixture in the center of each flattened chicken breast, fold in the sides, and roll tightly.
  5. Beat the eggs in a shallow dish. Dip each chicken bomb in the egg and then roll in breadcrumbs.
  6. Heat olive oil in a skillet over medium heat, add chicken bombs, and brown all sides.
  7. Transfer browned chicken bombs to a baking dish and bake for 15-20 minutes until cooked through.
  8. Remove from the oven, let rest for a few minutes, then serve warm.

Notes

These chicken bombs pair well with a salad, garlic bread, or roasted vegetables. Store leftovers in an airtight container for up to 3 days.
