A delightful Strawberry Cheesecake Swirl with a smooth cream cheese filling and tangy strawberry swirl, perfect for any occasion.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup fresh strawberries, pureed
  • 1/4 cup sugar (for the strawberry swirl)
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine the graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl; press into a springform pan.
  3. Beat the cream cheese until smooth, then add 1 cup sugar and vanilla, mixing until creamy.
  4. Add eggs one at a time, mixing well after each, then fold in the sour cream.
  5. Combine pureed strawberries with 1/4 cup sugar and cornstarch until mixed.
  6. Pour half of the cheesecake batter into the crust, swirl in half of the strawberry mixture, then repeat.
  7. Bake for 55-60 minutes or until the center is set, then cool and refrigerate for at least 4 hours before serving.

Notes

Best served with whipped cream and fresh strawberry slices. Can be made a day in advance for optimal flavor.
