A protein-packed breakfast featuring creamy cottage cheese and fluffy eggs, baked to perfection.

Ingredients

  • 1 cup cottage cheese (4% fat)
  • 4 large eggs
  • 1/4 cup Parmesan cheese (grated)
  • 2 tbsp fresh chives (finely chopped)
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly coat a 9-inch pie dish or an 8×8-inch baking dish with oil or cooking spray.
  3. Pulse the cottage cheese in a food processor until silky and smooth.
  4. Beat together the eggs, blended cottage cheese, Parmesan, chives, garlic powder, paprika, salt, and pepper until well combined.
  5. Transfer the mixture into your prepared baking dish and spread evenly.
  6. Bake for 15-17 minutes, or until set and lightly golden.
  7. Cool for 2-3 minutes before slicing and serving.

Notes

Feel free to add vegetables for extra nutrients and flavor. Leftovers can be stored in an airtight container for up to 3 days.
