  • 1 onion, diced
  • 1 cup corn
  • 1 can black beans, rinsed and drained
  • 2 cups salsa
  • 2 cups shredded cheese (cheddar or a Mexican blend)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips (for serving, optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the shredded chicken, diced bell pepper, diced onion, corn, black beans, salsa, chili powder, cumin, salt, and pepper in a mixing bowl.
  3. Spread the chicken mixture evenly in a greased baking dish.
  4. Top with shredded cheese evenly over the chicken mixture.
  5. Bake for 25-30 minutes until the cheese is melted and bubbly.
  6. Serve warm with optional tortilla chips.
