  • 2 pounds Yukon Gold or Russet potatoes
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary (or your favorite herb)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the potatoes if desired, then cut them into 1-inch cubes.
  3. Combine the melted butter, olive oil, minced garlic, rosemary, salt, and pepper in a small bowl.
  4. Toss the potato cubes with the garlic butter mixture until evenly coated.
  5. Spread the coated potatoes on a baking sheet in a single layer.
  6. Bake for 25–30 minutes, flipping the potatoes halfway through.
  7. Remove from the oven, garnish with chopped parsley if desired, and serve immediately.

Notes

For extra flavor, sprinkle grated Parmesan cheese before the final few minutes of baking or add red pepper flakes for a spicy kick.
