A comforting and creamy baked rice pudding that brings back childhood memories, perfect for any occasion.

Ingredients

  • 1 cup rice
  • 4 cups milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 eggs
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the rice, milk, sugar, vanilla, salt, and cinnamon in a large pot.
  3. Heat over medium heat, stirring occasionally, until the mixture starts to boil.
  4. Beat the eggs in a separate bowl and temper them with a little of the rice mixture.
  5. Fold in the raisins if using.
  6. Pour the mixture into a greased baking dish and bake for 45-50 minutes.
  7. Serve warm or chilled, allowing it to cool slightly first.

Notes

Serve with whipped cream or caramel sauce for a delicious twist. Store in the refrigerator for up to five days.
