Ingredients

  • 12 oz rigatoni pasta
  • 1 cup ricotta cheese
  • 2 cups fresh spinach
  • 2 cups marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the rigatoni according to package instructions until al dente, then drain and set aside.
  3. Sauté garlic in a skillet with olive oil until fragrant.
  4. Wilt the spinach in the skillet until bright green.
  5. Mix the cooked rigatoni, sautéed spinach, ricotta cheese, marinara sauce, salt, and pepper in a mixing bowl.
  6. Transfer the mixture to a baking dish and top with mozzarella and Parmesan.
  7. Bake for 25-30 minutes until cheese is bubbly and golden.
  8. Let cool for a few minutes before serving.
