  • 1 ripe banana, mashed
  • 1 1/4 cups oats
  • 1 egg
  • 1/4 cup mini chocolate chips
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the cottage cheese, mashed banana, egg, and vanilla extract in a large bowl until smooth.
  3. Stir in the oats, baking powder, and salt until well combined.
  4. Fold in the mini chocolate chips until evenly distributed.
  5. Scoop heaping tablespoons of the mixture onto the prepared baking sheet, leaving space between each cookie.
  6. Bake for 12-15 minutes, or until cookies are set and lightly golden around the edges.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
