  • 3/4 cup almond flour
  • 1/4 cup cottage cheese (blended)
  • 1/2 cup mashed banana
  • 1 large egg
  • 1/4 cup walnuts, chopped
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the egg, blended cottage cheese, and mashed banana in a medium bowl until smooth.
  3. Combine the rolled oats, almond flour, baking soda, and cinnamon until just mixed.
  4. Add in the chopped walnuts and gently fold.
  5. Scoop the dough onto a lined baking sheet, spacing them 2 inches apart.
  6. Bake for 13-15 minutes until edges are lightly golden.
  7. Cool the cookies on the sheet for a few minutes before transferring to a wire rack.

Notes

For a sweeter taste, use ripe bananas and consider adding vanilla extract. Store cookies in an airtight container for up to 3 days.
