  • 1 lb salmon fillet, skinless and boneless, cut into 1-inch cubes
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon honey
  • 2 cups cooked brown rice
  • 1 cup shredded cabbage
  • 1 cup sliced cucumber
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1 tablespoon sesame seeds
  • Vegetable oil, for frying

Instructions

  1. Combine the flour, salt, and black pepper in a shallow dish. In a separate bowl, beat the eggs until well combined. In another dish, place the panko breadcrumbs for coating.
  2. Take each salmon cube and first dredge it in the flour mixture, ensuring it’s evenly coated. Next, dip it into the beaten eggs, letting the excess drip off, and then coat it thoroughly in the panko breadcrumbs. Place the coated salmon cubes on a plate and set aside.
  3. In a large skillet, heat a generous amount of vegetable oil over medium heat. You want the oil to be hot enough that a drop of water sizzles when it hits the surface.
  4. Once the oil is hot, carefully add the salmon cubes to the skillet in a single layer. Fry them for about 3-4 minutes on each side, or until golden brown and cooked through. Once done, remove them from the skillet and let them drain on paper towels to absorb any excess oil.
  5. In a small bowl, whisk together the mayonnaise, Sriracha sauce, and honey until well combined and creamy. This sauce is what brings a tantalizing zest to the dish!
  6. Divide the cooked brown rice among four serving bowls. Top each bowl with a generous amount of shredded cabbage, sliced cucumber, shredded carrots, and the crispy fried salmon bites.
